This coffee comes from Yirgacheffe, arguably Ethiopia’s most popular coffee producing region. It is part of a select number of lots to undergo “special preparation” at the hands of the staff of the Halo Beriti washing station. At multiple points during post-harvest processing, this coffee is hand-sorted to ensure that only the ripest and most uniform cherries/beans make it through to export. Halo Beriti, like most washing stations in Ethiopia, serves hundreds of individual smallholder farmers, with each farmer often only managing less than one hectare of land respectively.
In the cup, the notes we find align well with common expectations of current-crop naturally-processed Ethiopian coffees. The cup begins clean and tart, with a stonefruit note like peach. A honey-like sweetness and light body become clear as the tartness fades, carrying most of the experience. The sip finishes with gentle florality (think edible flowers) that lends a bit of astringency to the aftertaste.
