**NEW** ETHIOPIA Arsosala

This coffee comes to us from  Mr Ocholo Bedecho, whose farm in the Urga District of Guji is uniquely large compared to other smallholders in Ethiopia. His eight hectares of land produce coffee for income, as well as food for his family to consume. Mr. Ocholo works on the farm full time with help from his children when they are not in school. This lot is made up of native heirloom Ethiopian varieties grown at 2200-2300 MASL. The remarkable altitude, rich soil, and available shade in the Guji region lend to a complex cup with high acidity and delicate layers of fruity and floral flavors. By finishing this coffee with traditional washed processing, this distinctively Ethiopian profile is preserved in the cup.

Like many washed Ethiopian lots, this cup is exceptionally approachable. When hot, we taste bright bergamot acidity balanced by earthy sweetness like palm sugar. Hints of stonefruit also appear throughout the cup, followed by a delicate florality akin to violet as the cup cools. We think this coffee feels classic, representing the most celebrated qualities of washed Ethiopian coffee.
