A third generation coffee grower, Oscar Hernandez is a rising star in the coffee community—and this Pimiento variety the Hernandez family isolated at Los Nogales is a special treat.

Rigorously handpicked, the lot undergoes Oscar’s signature "Thermal Shock" process of 80°C heat for twenty seconds, a cold plunge, and finally a 96-hour anaerobic fermentation in sealed tanks with a secret weapon: "liquid dough" of native microorganisms from a previous batch.

For the adventurous drinkers among us, this is the wildest bean we have on the menu, as well as many of our baristas' current favorite on the Poursteady. Give it a try next time you're in the shop! We find notes of raspberry, eucalyptus, strawberry lemonade.
