The farm is tucked away in the beautiful hills of Huila, Colombia, Gerson has spent the last 25 years pouring his life into his 8-hectare farm. For him, coffee isn't just a business - it’s a family legacy started by his grandmother that he now carries forward with his wife, Fernanda, and their two kids. At an altitude of 1,680 meters, Gerson carefully tends to 20,000 trees, including special varieties like Pink Bourbon. He’s a bit of a perfectionist when it comes to flavor, experimenting with long 100-hour fermentations to get those unique notes just right. But it’s not all about the beans; Gerson is a strong believer in looking after the land. He foregoes the use of harsh chemicals and works to keep Villa Pastora a lush home for scarlet macaws and ancient cedar trees.
