This cffee comes to us from Faiber Bolanos, a dedicated third-generation coee farmer from Colombia. He owns a farm called La Esperanza and manages another for his mother, focusing on specialty varieties like Pink Bourbon, Gesha, and Caturra. Faiber is a member of the Los Naranjos cooperative, a small but strong group of about 50 local farmers. His role as a coee buying liaison for the Los Naranjos group has helped him become an expert cffee roaster and taster, ensuring top quality from farm to cup. Pink Bourbon cffee is a relatively rare (although growing in general availability) variety with pink-hued ocherry (when ripened).
We find the flavors tending toward savory fruits like papaya with notes of citrus, bordering on stewed citrus to a strawberry to raspberry lemonade. Anaerobic washed coffee processing involves fermenting de-pulped cherries in sealed, oxygen-free tanks for an extended period to develop complex, creamy flavors, followed by a traditional wash to clean the beans.
