Yet another Peruvian coffee in our 2017 lineup. These coffees for the last two years have been real slept on gems. The cup quality coming out of the Peru has shown a marked improvement over the last couple of years. This particular coffee comes from the district of La Coipa, in Cajamarca.

The association of Ecological Agricultural Producers of Guay Apae (where this coffee originates) is composed of a group of small-scale coffee growers. The members of the group not only receive benefits for social and financial services but they also focus on gender equality and the role of women in the coffee industry.

This coffee consists of the Typica, Caturra and Bourbon coffee varietals. The coffees are harvested between June and August. It is a fully washed coffee that shade grown at an altitude of 1600 to 2000 meters above sea level. It is certified NOP Organic.

In the cup, look for notes of green apple with a tootsie roll like finish. It’s a great every morning filter coffee. It also works well as an espresso. Brewing ratios are our typical 25g of coffee to 350g of water -to scale use the 1g coffee per 14g of water. For espresso, consider 1:1.7 (so for example, 20g in the basket to 34g out in the demi).
