Mexico Sierra Mixteca // 12 oz
This coffee is a current crop offering from Oaxaca, Mexico; in particular, Sierra Mixteca also commonly known as La Mixteca. This is a mountainous region in south central Mexico. La Mixteca actually overlaps both the states of Oaxaca and Puebla, so you will likely see a number of coffees with the Mixteca designation. The inhabitants of this region, approximately 200,000, belong to the Mixtec people, who engage mainly in agriculture for their livelihoods. In the cup look for notes of mild baker’s chocolate when hot, then a transition to a red plum, a hint of hibiscus and a long finish as it sweetly layers itself on the tongue, sip by sip. This coffee should work well both with or without milk, espresso or filter. A tried and true ratio that works for us with this coffee is 1g of coffee per 15.5 ml of water; with a medium grind for filter. For a water temperature, explore a range between 203F to 208F. Enjoy.
