This AB lot is the result of 1,200 smallholder farmers, all members of the Gaikundo Farmers Co-Operative Society. The Gaikundo Co-Operative (or factory) is located at the base of Mt. Kenya, and on a clear day provides breathtaking views. This region has a perfect soil and microclimate for high quality production and provides valuable access to the Rupingazi River for water. The river was formed when Mt. Kenya was still an active volcano and is characterized by hard deep black volcanic rock and cool clean water flowing from Mt. Kenya.
 
The Gaikundo factory has taken many steps to ensure that only the ripest, top-quality coffee cherries are processed. All cherries are hand-picked and delivered to the mill the same day, where they undergo meticulous sorting. Factory employees oversee the process and any underripe or damaged cherries will not be accepted by the ‘Cherry Clerk’ – one of the most important harvest-period staff, who keeps meticulous records of how much coffee each producer delivers on any given day.
 
For a brewing recipe start with a ratio of 1 gram of coffee to 15 ml of water. Select a water temperature between 203 and 208F. Grind medium coarse. For pour over try pulse pouring by breaking up your post bloom volume into equal volume of pulses, pausing between each pulse as long as it takes for the bed to almost go dry, then adding the next pulse pour. Set this up so that you have a brew time of between 3:15 to 4 minutes, depending on the drip device. We hope you enjoy!
