**NEW** ETHIOPIA Yabitu Koba

At some of Ethiopia’s most extreme altitudes lies Guji’s Uraga region, a dense, mountainous forest that spans almost a thousand miles. This immense forest contains an array of distinct subregions, where some of the most extraordinary and sought-after coffees anywhere in the world are sourced. Like many Ethiopian regions, Uraga coffees are renowned for their distinct florality and delicate balance of flavors. This particular lot comes to us from the Yabitu Koba farm by way of Dagne Chomen and the Welichu Wachu mill. Dagne is a veteran of the Guji region and has spent years studying and cultivating coffees across said region. He has an intuitive and specific understanding of Uraga, which lies at the center of Guji, and built his centralized washing station in an area called Muda Tatesa that sources from elevations as high as 2300 masl. His expertise and care are evident in the final product: a cup with delicate notes and a clear evolution as the cup cools. We found a distinct impression of melon, followed by a sweetness akin to toffee and orange blossom honey. On pourover, this coffee benefits from a coarse grind, which will open up the brighter impressions. Expect draw-down time to be longer than usual.
