This coffee is sourced by Testi, a speciality trading company owned by Faysel A. Yonis and Hakime Yonis. Faysel A. Yonis was born into a coffee producing family. His father, Abdosh Yonis, owned two farms near the Chelenko village, but lost them during Ethiopia’s Derg regime. The Derg regime was a Marxist-Leninist military junta that abolished the monarchy and ruled Ethiopia from the mid seventies to the late eighties. Faysel returned to his coffee roots at the start of this century and founded his own trading company dedicated to sourcing specialty coffee within Ethiopia. This week’s coffee comes from the Bishan Dimo washing station, which processes coffee from 800 or so small farmers, each with an average farm size of about 4 acres. The coffees are for the most part shaded by false banana trees and the forests that surround their farmers. In the cup look for classic Guji highland notes, such as stone fruit, peach and apricots, as well as pleasant citrus notes of lime. The combination produces a juicy impression.
