Bishan Dimo is in the Dendi Uddo kebele (ward) of the Odo Shakiso woreda (district) in the Guji region. Set on three hectares of land, it is slightly smaller than its sister washing station, Mulish. Bishan Dimo offers fully washed coffee as well as natural coffee. The washing station’s main output is washed grade-one coffee. The coffee itself comes from farms sitting at altitudes ranging from 1850 to 2050 masl. The trees are a mix of indigenous varietals of the Guji area as well as disease-resistant varietals from the Jimma Agricultural Research Center (JARC). The washing station trains farmers to ensure cherries are picked at the perfect time for highest flavor and quality. If farmers have difficulty bringing their cherries to the washing station, the washing station arranges transport to make sure the cherries arrive at the station within a day – also important for maximum quality. The washing station pays a premium to farmers who bring better coffee – encouraging the farmers to improve their methods. During brewing, this coffee has a tendency to draw down slowly as pour over, which is likely due to the density of the bean. If you encounter this, try breaking your brewing volume up into more pulses, say a one or two additional pulses, perhaps 6 instead of 4. Rest 10 to 15 seconds between each pulse and potentially coarsen the grind. In the cup, look for notes of lime zest, honeydew melon, and caramel. Cheers!
