Transitions, this coffee is all about transitions; within life and within coffee. Fifteen years ago Juan Diaz was a laborer processing wood. To supplement his income, he picked coffee during the harvest season. He saw coffee production as a path to a better life for him and his family. About 5 years ago, he started focus on speciality coffee production. And that leads us to where we are today. This coffee is a Pacas variety and Honey processed, a “transitional” processing method between full natural and fully washed. In this processing method the coffee cherries are pulped (the degree of pulping, set by the gap between the wet mill rollers) and then dried on raised beds. The amount of pulp let on the beans and the length of drying determine the character of cup. More pulp and/or longer drying times result in a more full natural cup profile. Less pulp and/or shorter drying times result in a more fully washed cup profile. Honey processed coffees tend to present a ‘cleaner’ cup profile than full natural process, yet suggest more fruit and sweetness than fully washed coffees.
