This coffee is from El Salvador and represents the 3rd harvest we have purchased from Mr Diaz. Fifteen plus years ago Juan Diaz was a laborer processing wood. To supplement his income, he picked coffee during the harvest season. He saw coffee production as a path to a better life for him and his family. Within the last 10 years, he started to focus on specialty coffee production. This coffee is a Pacas cultivar and Honey processed, a “transitional” processing method between full natural and fully washed. In this processing method the coffee cherries are pulped (the degree of pulping is set by the gap between the wet mill rollers) and then dried on raised beds. The amount of pulp left on the beans and the length of drying determine the character of the cup. More pulp and/or longer drying times result in a more full natural cup profile. Less pulp and/or shorter drying times result in a more fully washed cup profile. Honey processed coffees tend to present a ‘cleaner’ cup profile than full natural processed coffee. If you enjoyed this cup from us last year you will note more sweetness and a slightly bigger impression of citrus (the last crop we purchased was a little more nutty and tobacco suggestive).
