This coffee comes to us from the Narino department of Colombia. Narino is located near the Pacific Ocean. Years ago when we started discovering the differences and characteristics of coffees produced by each department within Colombia, Narino quickly became a standout region for us. The region/mill this week’s coffee comes from is known as Los Rosales, named after the roses grown on the farms in the region. We had originally planned to build our “True Level” partner coffee program around a coffee from Narino and this Rosales AA coffee was what we initially short listed. However, during this same time frame we also came across La Virgen/Guadalupe AA from the Huila department and we felt it was a better fit for what we wanted the True to be able to do. At the end of January, we ended up between harvests of La Virgen and pivoted to Los Rosales as we waited for the fresh crop La Virgen to arrive next week. The Rosales AA is grown at 1700 to 2100 m.a.s.l. and consists of the varieties typica, colombia, castillo, and caturra. In the cup look for notes of cinnamon, savory notes and herbal tones. The next installment of the subscription program will be one of our new fresh crop lots from Peru. Enjoy.
