COLOMBIA Pink Bourbon (Honey Processed)

This is a honey processed Pink Bourbon from Luis Anibal Calderon out of Huila Colombia. It is a bit funkier for a honey processed coffee. It is still clean, but a bit more brightness in the cup than expected. It has bit of red fruit, milk chocolate throughout the cup. There are notes of strawberry and watermelon which lean into the dry side of things, like an Oolong tea to earthy and herbal, slight hoppy; tipping toward dry citrus. It needs a little coarsen on the grinder. It can benefit from front loading the bloom, with a 1 to 3.5 coffee to bloom mass ratio. We applied our typical 1:15 brewing ratio on the V60 to produce the notes noted above.
