These coffees are produced by a mother and son team that operate El Mirador. Elkin Guzman, the son, is young, energetic, intelligent and driven to expand the range of coffee varieties the farm produces. In addition, Elkin’s is very active in exploring innovations in post harvest processing methods, such as anaerobic fermentation. This box set represents a study in both some of the varieties produced at El Mirador, as well as some of the the innovative post harvest processing methods. 

The set comes with 6 oz of 3 varietals.

Catiope, anaerobic process (plum, lime, herbal) - The Catiope variety is a cross between Colombian Caturra and Ethiopian heirloom varieties "CA(turra)-(e)TIOPE". It was developed in the Colombian department of Cauca. The depulped coffee is dry fermented in open air for 18 hours then moved to covered tanks to ferment for 24-36 hours with molasses added to provide sugars for yeast and bacteria to break down.

Caturranatural process (fruity, boozy, tart, chocolate) - Ripe cherries are harvested, cleaned, and then placed in a single layer in the sun on elevated drying tables. As the cherries dry they are raked daily by hand to ensure even drying. This process can take up to four weeks to complete. 

Red Bourbon, anaerobic process  (savory, citrus, herbaceous) - The depulped coffee is dry fermented in open air for 18 hours then moved to covered tanks to ferment for 24-36 hours with molasses added to provide sugars for yeast and bacteria to break down.
